Keller + Manni Chocolate is proud to introduce our hand-made dragées. A version of the popular recipe produced at Per Se, our dragées start with a hazelnut that is caramelized to develop a balance of sweetness and roasted flavors. While the caramelized nuts remain hot, each is rounded by hand, chilled and tumbled in alternating layers of molten milk chocolate and Feuilletine (thin flakes of crispy pastry). Next, the dragées are covered in layers of dark chocolate and finished with a final dusting of cocoa powder.
This intricate process results in a delightfully complex confection that is at once crunchy, bitter and sweet.
